"Cured" in Spokane

 

 

Spending most of the part of the week in Spokane, I’m not expecting to be blown away by a culinary experience. The night I arrive is what I expected… restaurants closed as it is Sunday night, and taking down a cheeseburger.

 

After a long day of cooking, chef buddy asks me to meet him at a place called “Sante”.  I have no expectations as I make my way to the restaurant.  As soon  as I set foot through the door, I find Chef Buddy, and directly behind him... HOLY CRAP!!!! PILES OF HOUSE CURED PANCETTA, PROSCIUTTO, AND TERRINES!!!  This is not a lie… it exists in Spokane!  I ordered a glass of Cava and tried to make my decision from the menu, a task not easy when tempted with such a breadth of tantalizing treats.  I decided on the duck confit and the charcuterie plate.  The duck confit was pulled and placed in neat little piles atop a sort of pancake, call it a blini if you want to, along with a sort of candied plum and drizzled with a plum gastrique.

The Charcuterie plate consisted of a sausage, prosciutto, terrine, mustard, brie, red pepper confiture, candied walnuts, and a red pepper coulis.  ALL HOUSE MADE!  These walnuts seriously melted when they hit my tongue, red pepper confiture was like candy.  Prosciutto with a new distinct indescribable flavor that I still have not nailed down, but damn good. 

Chef buddy and I went downstairs and met the chef/owner who was composing menus for a charity function and we exchanged info on where to eat in our respective areas.  Word on the street is there is another project coming from this Spokane Culinary Revolutionary???

I wanted to stay there to move into dinner service but unfortunately they did not have dinner service on Monday night.  But I do know where I need to have dinner next time im in Spokane!

Surprise again!  Next stop, The Catacombs, under the Montvale Hotel.  A European fashioned basement bar/restaurant with walls of rock and old world style wood banquettes.  Get comfy at the bar as the Woodstone oven fires off the scent and visions of pizza!  Chimay in Chimay glasses and Stella in Stella glasses.  If drinking and conversation is on the agenda in Spokane, go.

I actually had the Duck Confit. I am a little pissed you got 4 I only got 3. It rocked. The waitress hooked me up with a glass of wine to go with the spicy carrot soup. Both were great. I will be back this next weekend, thanks Truby!!
